TOPSY TURVY CUPCAKES
In a small bowl, beat:
8 oz. cream cheese
1 egg
1/3 cup sugar
1/8 tsp. salt
Stir in:
1 cup chocolate chips and set aside.
In a large bowl, combine:
3 cups flour
2 tsp. baking soda
1 tsp. salt
2 cups sugar
1/2 cup cocoa
2 tsp. vanilla
2/3 cup oil
2 cups water
2 Tblsp. vinegar
2 eggs
Line a cupcake pan with liners. Fill each cupcake 1/2 full with batter. Top each with 1 Tblsp. cheese mixture. Bake at 350° for 25-30 minutes. Do not over bake. No frosting needed. Makes 3 dozen.
