No Bake Cheese Cake

CHEESE CAKE
1 LARGE BOX OF LEMON JELLO
1 CUP OF HOT WATER
3/4 CUP SUGAR
1 LEMON OR JUICE EQUAL TO 1 LEMON
1 TSP. OR MORE OF GRATED LEMON RIND
� TSP. VANILLA
1 8 OZ. PKG. CREAMCHEESE
1 LARGE CAN EVAPORATED MILK Chilled
Mix jello, hot water and � cup sugar, stir until jello and sugar is dissolved then chill in refrig., until partially congealed.
Mix rest of sugar, vanilla, juice of lemon and grated rind with cream cheese. .
Chill and whip evaporated milk, Add jello mix to chesse and fold in whipped milk
CRUST: 4-5 tablespoons of melted oleo and crushed graham crackers (about 20 to 25) mix and press on bottom of baking dish.... save a little of graham crackers and oleo mix for top of cheese cake.... refrig. at least over night and then serve...
I always double this and put in the largerest refrig. Dish that I have. I was cooking for 5 plus it is so good.... Mona...... I have made this for about 30 years or more....It sounds hard but it isn't. It is a good warm weather dessert as it is a no bake. I ate Wal-Greens once and thought this was it....
