    muffin

    Oats, raisins, and
    high-fiber bran make
    these muffins nutritious and delicious!

    3/4 cup low-sugar bran cereal (flakes or
    nuggets)
    3/4 cup skim milk
    1 egg
    1 egg white
    1 Tbsp canola oil
    1/4 cup unsweetened applesauce
    1 Tbsp honey
    1 Tbsp brown sugar
    1 cup quick-cooking oats
    1/3 cup whole-wheat flour
    1/3 cup white flour
    1/2 cup currants or raisins
    1 tsp vanilla
    1 tsp cinnamon
    2 tsp baking powder


    1.Preheat the oven to 375 degrees.
    Combine all ingredients and mix until
    blended. Do not overbeat. Pour the
    batter into 12 nonstick muffin cups and
    bake for 20 to 25 minutes. Remove
    muffins from oven and let cool slightly.
    Remove muffins from pan and let cool
    completely.
