FAST CORN CHOWDER LUNCH
Recipe for Wednesday, 8/23/00
Lunch:
1 serving Fast Corn Chowder
6 saltine crackers
1/4 cup low-fat cottage cheese on lettuce leaf
1 cup melon balls
Fast Corn Chowder
4 servings/Serving size: 1 cup
1 17-oz can cream-style corn
1 12-oz can whole kernel corn with sweet peppers,
undrained
1 12-oz can or 1&1/2 cups evaporated skim milk
1 tsp dried minced onion
Dash pepper
1 Tbsp margarine
1.In a medium saucepan, combine both cans of corn,
evaporated milk, onion, and pepper.
2.Bring to a boil, stirring constantly. Add margarine.
Serve.
