    Quick Chilli

    Recipe for Saturday, 10/14/00

    Quick Chili
    6 servings/Serving size: 1 cup

    2 tsp olive oil
    1 medium onion, chopped
    1 small red pepper, chopped
    4 cloves garlic, minced
    1 lb lean pork tenderloin, trimmed and ground (your butcher will do this for you)
    3 Tbsp ground chili powder
    1 tsp cinnamon
    1/2 tsp allspice
    2 cups canned tomatoes, coarsely chopped, undrained
    2 cups low-sodium beef broth
    1 Tbsp red wine
    1 Tbsp Worcestershire sauce
    Fresh ground pepper to taste

    1.In a stockpot over medium-high heat, heat the oil. Add the onion and pepper and sauté for 5 minutes. Add the garlic and
    sauté for 2 minutes. Add the pork and sauté for 5 minutes.
    2.Add the remaining ingredients and simmer over medium-low heat for 20 minutes.
