Strawberry Vinaigrette

Makes 2 1/2 cups, or 20 servings (2 tablespoons)
RECIPE INGREDIENTS
1 cup Smucker's Sugar Free Strawberry Preserves
1/4 cup balsamic vinegar
1/4 cup Dijon mustard
1/2 to 1 teaspoon ground pepper
1/2 cup olive oil
Water
RECIPE METHOD
In a medium bowl, using a wire whisk, whip together the preserves, vinegar, mustard and pepper, until thoroughly emulsified.
Gradually whisk in 1/2 cup olive oil, then 1/2 cup of water (more, if desired).
