"The Best Corn Dogs"
I got this recipe for a newspaper years ago, when my kids were still little. You can use the full size hot dogs, half size, or 1 or 1-1/2" pieces. For the smaller sizes, use thick toothpicks for skewers.
1-1/2 cup flour
2 Tablespoons sugar
3/4 teaspoon salt
1-1/2 teaspoon baking powder
1--1/2 teaspoon DRY mustard
3/4 cup cornmeal
1 egg
1-1/3 cup milk
1 Tablespoon salad oil
------
1 pound franks
1/2 cup flour
Shortening to deep fry
Wooden skewers or toothpicks.
Mix the 1-1/2 cup flour, sugar, salt, baking powder, and dry mustard. Stir in the cornmeal. Beat the egg; add milk and oil together. Add to the flour mixture and stir til blended.
Stick wooden skewers into ends of franks. Wipe franks with a dry cloth. Dust the franks with flour, then dip into the batter. Drop into hot fat (375°F)
and fry til golden brown. Drain on absorbent paper. Serve hot.
1 Tablespoon of dried parsley to the batter. So people wil know they are home made....This recipe makes good Hush puppies....
