This recipe is from The Busy Woman's Cookbook. It called for boneless chicken breasts but I used it with center-cut pork chops. John absolutely loved it.
4 pork chops or chicken breasts
1/2 C dry roasted peanuts
3/4 C corn flakes
Honey mustard
Finely crush or blend corn flakes and peanuts. (I used my Bullet Blender.) Brush honey mustard all over meat, then roll in coating mix and place in shallow baking pan or dish, which has been sprayed.
Bake at 400 for 30 minutes.
