Pumpkin Muffins:
1 cup pumpkin
2 eggs beaten
2/3 cup nonfat dry powdered milk
2 tsp pumpkin pie spice
1 tsp. cinnamon
6pkg sugar substitute (I use Splenda now)
1/2 cup grated carrots
6 TBS. AP flour
1 tsp baking soda
4 TBS raisins
1 tsp vanilla
combine all dry ingredients in bowl, add eggs and vanilla,then add pumpkin, raisins,and carrots, mix well. Spray a 12 cup muffin pan with non stick cooking spray. Put mixture into muffin pan. Bake @ 350º for 15 mins.
Serves 4
Serving size=3 muffins
Exchanges=1/2 meat,1 bread,1/4 vegetable,1/2 fruit,1/2 milk.
