    Jan’s Mexican Rice

    Jan’s Mexican Rice

    1 C rice
    2 T oil
    1/2 C each chopped onion, celery, green pepper
    2 C water
    1 tsp each tomato Caldo di Tomate, garlic salt, and chili powder

    Brown rice and veggies in oil.

    Combine all and cook for 20 minutes.

    We usually add a bit more cumin, and some corn. I didn't have either, so just used the Caldo. Chopped olives work also,
