Oyster Dressing 2
1/2 cup of butter
2 medium onions, minced
1/2 cup of bell pepper, minced
4 teaspoons of parsley, minced
1/2 cup of green onions, minced
3 dozen small oysters, chopped (reserve oyster liquid)
Salt
Pepper
Cayenne red pepper
Worcestershire sauce
4 cups of French bread, cubed
Melt the butter in heavy saucepan.
Saute first 5 ingredients with seasonings until onions are transparent, add chopped oyster and simmer approximately 15 minutes.
Add bread cubes and mix well.
If mixture seems too thick, add some of the oyster liquid you have reserved; adjust seasoning.
Transfer mixture to baking dish and bake 45 minute at 350 degrees.
