'Amish' Apple Strusel Pie
--------------------------------------------------------------------------------
OK, don't know if this is Amish or not, but it's the best apple pie I've ever made. It took me about 40 minutes of hands on time, but well worth it. I used a combination of Granny Smith and Cortland apples. Made it in a very deep pie pan, we'll get 8 or 9 servings out of it.
Once again, it's VERY good.
Struesel Topping
3 T flour
1/4 cup brown sugar
1 large egg
1/2 cup cold butter
pinch of salt
10" pie shell
Filling:
5 - 6 cups of peeled, sliced apples
1 t. vanilla
1 t. cinnamon
1/4 cup plus 3 T. flour
1 cup sugar
1 t. nutmeg
1 t salt
1 t. cinnamon
1 cup heavy cream
How to Prepare Amish Apple Pie
1. In a food processor bowl, mix the first 6 ingredients for streusel together.
2. Add the butter, and process until mixture is crumbly; it should still have a dry look, dont overprocess.
3. Add nuts, and set aside. I threw those in with the butter.
4. Preheat oven to 350 degrees.
5. Peel, core, and thinly slice the apples (should be about 5 - 6 cups).
6. Place apples in pie shell.
7. In a small bowl, mix the sugar, flour and cinnamon.
8. Beat the egg in a medium bowl, and add the cream and vanilla. Just add the cream and egg, no need for another bowl.
9. Add the sugar mixture to the egg mixture, and blend. Pour over the apples. 10. Bake for 1 hour in the lower third of oven.
11. After 20 minutes, sprinkle streusel over top. and continue baking about 40 minutes longer, or until the top puffs, and is golden brown.
