Gourmet Potatoes
6-8 med Potatoes - cooked, skinned, & grated
1/4 C Margarine
1 C Cheddar Cheese - grated
1 1/2 C Sour Cream
1/3 C Onions - finely chopped
Salt & Pepper
Paparika & extra Margerine
Melt Butter, Cheese, & Sour Cream on large skillet. When smooth, add onions, potatoes, salt & pepper. Mix well & put in 9x13 pan or some large casserole dish. Top with dabs of margerine & sprinkle w/paparika. Bake at 350 for 25-30 min or until bubbly around edges.
These freeze very well. I like to make an extra large batch & freeze them to have with dishes later on. They are also very good with meatloaf.
