    Hot Chicken Salad

    6 cups lettuce leaves, chopped
    1 bunch spinach, chopped
    6 oranges, peeled and segmented or Mandarin oranges
    3 T soy sauce
    2 T maple syrup
    1/4 tsp ground ginger
    3 T water
    3 T vegetable oil
    1 pound boneless chicken breast, cut in strips
    3 scallions chopped
    1 tsp minced garlic
    1/4 cup water chestnuts sliced.

    In a large salad bowl, mix lettuce spinach and oranges. In a separate bowl, mix soy sauce, maple syrup, ginger and three tablespoons water. Set aside. In a wok or large frypan heat oil, add chicken and stirfry about five minutes. Add scallions, garlic, chestnuts, and reserved sauce, and cook for 30 seconds. Pour chicken and sauce over greens and oranges.
    Garnish w/cashews! Yummmmm!~
