POTATO SALAD different but good

POTATO SALAD
I ate this recently at a friends house, and decided it was the best potato salad I have ever eaten.. so I called my friend and got the recipe.. here it is.
Sallys Potato Salad.
2 1/2 # potatoes
6 hard boiled eggs
2 tab. of Dry Parsley flakes
mix together:
1/3 c vinegar
1/4 c. CORN OIL.
2 Tables. Sugar
1 teas Salt ( or less)
1/4 teas black Pepper. Shake these together, very well.
cook potatoes in salted water till done.
cool till you can handle, then cube.
slice or cube 4 of the eggs.
sprinkle the parley leaves and very very lightly mix.
(could put together in layers?)
pour vinegar mix over the potatoes,, DO NOT TOSS.
marinate for an hour OR MORE
then add 1/2 cup real mayonaisse,,,, ( NOT salad dressing.)
stir gently..
top with the other two eggs, sliced on the top.
Sallys tweak,,, you can heat the oil mixture to get the sugar dissolved completely., and then let cool slightly. and pour over potatoes. Also , if using red potatoes,, she didnt peel them, just scrubbed them.
my tweak,,, my family will want onion in there some where,
altho there was none in what I did eat. and it was delicious.
if you are making for a bigger crowd,, and using more potatoes , just make more of the vinegar/oil mixture , and more mayo.
