    Creamy Slaw

    Source of Recipe

    TV Guide Celebrity Chef

With a hit show (Whose Line Is It Anyway?) under his belt, Wayne Brady can now afford to eat what he darn well pleases. Isn't it strange that the dish of which he's most fond is macaroni and cheese, the staple of broke students everywhere? "It's the meal that best sums up my time in Los Angeles," says Brady with a laugh. "My wife and I, when we first moved to L.A., had this little studio apartment. Then, I thought, you know, it would be a matter of time, a few weeks, and I'll just wait for a series to come up. Well, it's very easy to be broke when you don't have a steady gig." Brady's simple coleslaw is the perfect accompaniment to the macaroni standby.

1 cups cabbage, shredded 1 L 1 cup carrots, peeled and grated 250 mL 1/2 cup celery, sliced 125 mL 1/2 cup green pepper, chopped 125 mL 1/4 cup green onion, chopped 50 mL 1/2 cup mayonnaise 125 mL 1/4 cup sweet pickle juice 50 mL 1 tbsp cider vinegar 15 mL 1 tsp Dijon mustard 5 mL 1/2 tsp celery seed 2 mL 1/2 tsp salt 2 mL pepper to taste 1/4 cup sunflower seeds 50 mL
In a large bowl, combine cabbage, carrots, celery, green pepper and green onion. In a small bowl, whisk together mayonnaise, pickle juice, vinegar, mustard, celery seed, salt and pepper to taste. Add to cabbage mixture and toss thoroughly. Taste and adjust seasonings. Cover and refrigerate 1 hour, or until ready to serve. Just before serving, sprinkle with sunflower seeds. Makes 6 servings. This dish goes well with Wayne Brady's Three Cheese Macaroni.
