I use a large bowl to measure the items...
Everything is chopped in food processor
(if you just want a small amount use a smaller bowl)
large bowl of green peppers seeded and chopped
1/2 bowl of hot peppers, use rubber gloves while chopping keep seeds in if you want it hot but otherwise take out seeds before chopping.cAN USE LESS BUT need a few for flavor.....
Large bowl of peeled, chopped tomatoes, (I use use only the paste tomatoes)
large bowl of onions and celery chopped( more onions than celery)
Large bowl of zicchini and cucumbers, peeled and chopped
(if you want only use about 1/2 bowl)
Add large cans of tomato paste to thicken (about 3 or 4)
1/4 cup sea salt or less I taste it before adding all of it in.
2 or 3 cups of good white vinegar
As I chopped up the items and measured them I poured them into large kettle. After adding the vinegar bring to a boil and then cook for about 15 minutes, stirring every now and then.
Then process in hot water bath for 15 minutes or pressure canner 10 lb. for 10 minutes for quarts. Pints about 4 minutes less.
PLEASE MAKE IT MILD OR HOT AS YOU LIKE ... .................................
