    Buckingham Palace Shortbread

    Buckingham Palace Shortbread

    Ingredients A
    250g butter .56 lb..

    (1 stick of butter = 1/4 pound
    1 stick of butter = 1/2 cup
    1 stick of butter = 8 tablespoons
    1 stick of butter = 4 ounces
    1 stick of butter = 113 grams)

    1/3C sugar
    Cream butter and sugar
    Beat Ingredients A in a mixing bowl until light.
    Ingredients B
    2C plain flour
    3/4C +1T corn starch
    Mix the flours
    Put both flours into a bowl and stir well with a spoon. If you like you can sieve it.
    Chill the dough
    Add flour mixture to the butter mixture and mix well. Spread the dough onto a lamington tin to a thickness of about 3/4 inches thick. My lamington was a little too big so I filled it to 3/4 length. Chill in the fridge for abut 30 minutes. Then bake at 180 C /356 F degrees for about 40 minutes.

    Baked and cut
    Once baked, sprinkle heavily with fine sugar. Wait till it’s warm, cut into desired sizes and leave in the tin to cool. Enjoy. It’s really good with tea or coffee.
