DIABETIC CABBAGE SOUP
As I am a diabetic and have lots of trouble with my sugar after the hoildays I fix a cabbage
soup with lots of cabbage and it seems to lower my sugar and it is good too. Use 1/2 head
of cabbage cut into small chucks, 4 or 5 carrots sliced very thin, 4 or 5 stalks or ribs of
celery cut very fine, 1 large onion chopped up fine, 1 pkg. dry onion soup, 1 can of beef
broth, and then I pour in about 2 cups of V 8 juice. Cover the veg. with water and start
cooking and then add the beef broth and V8 juice and cook. Season with sea saalt and
pepper to your own taste. Add 2 or 3 cans of fench cut green beans after draining the juice
off of them. You take it from here and add more beef broth or whatever you want but this
is what works for me.... There so few calories in it you can eat some where you get
hungry. Mona
