Stuffed Pepper Soup
1lb ground beef
2 qts water (I'd use more)
1 qt tomato juice (I also added 1 qt canned tomatoes in error)
3 medium sweet Red and/or Green Peppers-diced
1 1/2 C Chili Sauce (1 bottle)
1 C uncooked long grain rice
1 lg Onion - diced
2 Celery Ribs - diced
2 tsp Browning Sauce
3 Chicken Bouillon Cubes (I used 3 large pinches of granulated)
2 Garlic Cloves - minced (I used 2 Tbsp)
1/2 tsp salt (pepper too)
Brown meat. In pot add all ingredients & bring to boil. Reduce heat to simmer - uncovered - cook for 1 hr or until rice is tender. Makes 4-5 quarts.
My tweeks: I had two recipes out on the counter at the same time & glanced at the other one in error & put in the quart of chopped tomatoes it called for. You know what though, it not only needed that extra quart of tomatoes, it needs more water. The rice just absorbed almost all the liquid. The chili sauce REALLY makes this recipe. This is a definite keeper! Now if the peppers will just come down in price. I happen to find 6 peppers in the reduced produce cart for $1.98 or I would not have made this recipe at this time.
