Chicken Chow Mein.....in the 9/90 Favorite Recipes(Chinese Ckg)
2 1/2 Tbsp dry Sherry....divided
2 Tbsp Soy Sauce...divided
3 tsp Cornstarch...divided
2 whole boneless, skinless chicken breasts...cut into 1" pieces
8oz boneless lean pork...cut into 1" pieces
1/2 C Water
2 tsp Chicken Bouillon granules/powder
2 Tbsp Veg. Oil
1 piece Fresh Ginger-pared & finely chopped
1 Clove Garlic - crushed
8 oz uncooked shelled & deveined Shrimp
2 med Yellow Onions - chopped
1 Red or Green Bell Pepper - thinly sliced
2 Stalks Celery - diagonally cut into 1" slices
8 Green Onions - chopped
4oz Cabbage (1/4 of small head) - shredded
Prepare Fried Noodles if that's what you are going to serve this over, or the rice.
Blend 1/2 Tbsl Sherry, 1/2 Tbsp Soy Sauce, & 1 tsp cornstarch in large bowl. Add chicken & pork. Toss to coat, cover, & refrigerate 1 hour...or there abouts.
Combine water, bouillon, remaining 2 tsp cornstarch, 2 Tbsp Sherry, and 1 1/2 Tbsp Soy Sauce in small bowl...set aside.
Heat wok or large skillet over high heat. Add oil and then stir-fry ginger & garlic 1 minute. Add chicken & pork..stir fry until meats are no longer pink. Add shrimp & cook until it's pink. Remove from pan. Add a bit more oil & stir-fry the vegetables until crisp-tender. Add liquid & meats. Cook & stir until sauce boils & thickens..cook an add'l minute.
Serve over noodles or rice.
I personally make more sherry/soy sauce mixture for the meats & the final sauce also. I like lots of sauce. We enjoy making rice noodles & serving this over them.
