Cauliflower Casserole
1 head cauliflower
1/2 C mayonnaise ( reduced fat can be used )
1 tsp prepared mustard
1 tsp onion, minced
3/4 cup shredded cheddar cheese
Break cauliflower into florets and boil in salted water or steam until fork tender. Place in baking dish.
In a small bowl, combine mayonnaise, mustard and minced onion.
Spread mixture over cauliflower. Sprinkle with shredded Cheddar cheese. Bake 3 to 5 minutes uncovered, in a 350 degree oven until the cheese begins to melt.
