HARVARD BEETS

2 C beets
2 T sugar
1 T cornstarch
1/4 tsp salt
1/4 C vinegar
2 T butter
Drain beets and reserve 1/3 C liquid.
In saucepan, combine sugar, salt, cornstarch. Stir in reserved beet liquid and vinegar. Cook and stir until mixture thickens. Add butter and cooked beets. Heat thoroughly (serves 5)
