    Tomatos with Penne'

    This sauce is light and full of flavor.


    List of Ingredients


    • Large bag of roma tomatos (couple of lbs)
    • Fresh whole basil
    • Garlic (lots)
    • Salt and Pepper
    • Extra Virgin Olive Oil
    • Penne' Pasta
    • Mozzerella Cheese (either shredded or cut into small cubes)


    Instructions


    1. Cover bottom of pot with EVOO
    2. Slice roma tomatoes in 1/2" slices
    3. Add tomatoes to pot as you slice them
    4. Add garlic and basil, salt and papper to taste
    5. Cover and simmer until desired consistency. At least 1 1/2 hours
    6. Cook Penne' Pasta and drain - do not rinse
    7. Pour tomato mixture over pasta in large serving bowl
    8. sprinkle with parmasean
    9. serve with Mozzerella on the side
