    Double Quick Dinner Rolls

    adapted from a Betty Crocker recipe to taste like Trufflehunters (Gresham).

    Recipe Introduction

    This is a very quick dinner roll to make. If you don't want it to be savory (like for dinner) skip the onion powder. Try some different herbs to make them interesting...like some fresh rosemary.

    List of Ingredients

    2 packages dry yeast**
    2 cups warm water
    1/2 cup potato flakes
    1/4 cup sugar
    2 teaspoons salt
    2 eggs
    1/4 tablespoon oil
    1 1/2 teaspoons onion powder
    5 1/2 cups flour


    Recipe

    Dissolve yeast in warm water (about 120`F) in lg. mixing bowl. Add potato flakes to water and let dissolve. Add sugar, salt, eggs, oil, onion pwd. and 1 c. flour. Beat until smooth. Stir in remaining flour. Continue stirring til smooth. Scrape batter from side of bowl. Cover and let dough rise in slightly warm oven for 20-30 min. Stir down batter. Spoon into 24 greased muffin cups, filling each 1/2 full. Let rise until batter reaches tops of cups, 20-30 minutes. Heat oven to 400 F. Bake 15 minutes. 2 doz rolls.


    **To use instant yeast, use 1 tbsp. and add it with the flour. Rising times will be a little shorter.
