    Basic Crepes

    This is a favorite Sunday supper at our house. We love Grandma's strawberry jam on it - or serve it with Lingonberries like the Swedes do.

    2 1/2 cups flour
    1 teaspoon sugar
    1/4 teaspoon salt
    6 eggs
    3 cups milk
    4 tablespoons butter melted and cooled
    butter for cooking -- melted

    This is a doubled recipe, so you may have to cut the ingredients in half to fit in the blender. I make several batches in the blender and pour each into a large bowl to make the crepes from. I also use two frying pans at a time. King Arthur Flour has a nice crepe pan I like to use.

    Mix first 6 ingr. in blender. Refrigerate, covered, for 2 hours or overnight. (I never do this). To cook: Use a teflon lined skillet that is 6-8" in diameter at the bottom. Brush skillet with butter; heat over moderately high heat until small drops of water sizzle when sprinkled over bottom. Pour 1/3 c. batter in middle of pan; quickly tilt in all directions to cover bottom with a thin film of batter. Cook for 1 minute; turn and cook 30 seconds. Slide crepe onto a plate. Continue cooking rest of batter and stacking crepes. Brush pan lightly with butter for each crepe as necessary (I do this between each crepe - very lightly). When I say butter, marg. can also be used. I just use butter for all my cooking - better for you.) (^_^)
