    Favorite Coffee Cake with Streusel

    Recipe Introduction

    This is one of our family's favorite coffee cakes. Everyone I serve it to agrees.

    List of Ingredients

    3 cups flour
    1 1/2 cups sugar
    5 teaspoons baking powder
    1 1/2 teaspoons salt
    1/2 cup butter -- melted
    1 1/2 cups milk
    2 eggs
    Topping:
    1 cup brown sugar -- packed
    4 teaspoons cinnamon
    1 cup finely chopped nuts
    1/4 cup butter -- melted



    Recipe

    Heat oven to 375. Grease 15x10 jelly roll pan or 9x13 baking dish. Blend all cake ingredients; beat vigorously 1/2 minute. Spread in pan. Mix topping ingredients together and spread on top of batter. Bake 30 minutes in jellyroll pan or 25-30 minutes in 9x13. Check doneness with wooden toothpick. Serve warm. You can also layer the streusel - pour half the batter into a 9x13 pan, sprinkle half the mixture over batter, top with remaining batter and then remaining brown sugar mixture. If you use the jellyroll pan you don't really need to layer. It's easy to halve this recipe for smaller families. Use a 9x9 square or round cake pan.
