    Apricot Squares

    These are simple but so good - hard to eat just one!

    List of Ingredients




    2 cups flour
    1 cup butter
    2 egg yolks
    1 teaspoon vanilla
    3/4 cup brown sugar, packed
    TOPPING
    1 10 oz. apricot preserves
    1/2 cup nuts, coarsely chopped



    Recipe



    Preheat oven to 350 F. Cream flour, butter and brown sugar. Add eggs and vanilla; mix well. Press into 9x13 pan. Bake for 20-25 minutes. Take out and spread preserves evenly and sprinkle nuts on top. Score into squares but leave in pan. Return to oven at 250 F. for 15 minutes. Cool on rack.
