List of Ingredients
3/4 cup butter
3/4 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon vanilla
1 large egg
1 1/3 cups old fashioned rolled oats
1 1/4 cups whole wheat pastry flour
2 cups dried fruit*
1 cup pecans -- diced
Recipe
*cranberries, diced apples, chopped dates, raisins, chopped apricots or dried fruits of your choice
Cream together butter, sugar, spices, leaveners, salt and vanilla. Beat in the egg. Add oats, flour, fruit and nuts to combine. Drop the dough by heaping tablespoonfulls on to a lightly greased or parchment lined baking sheet. Bake in preheated 350 oven for 7 minutes. Reverse the pans on the racks and bake for an additional 7-8 minutes, until cookies are beginning to brown around the edges but are still soft in the center. Remove from oven and cool on rack.
I've adjusted this recipe from the original King Arthur Flour recipe. I've lessened the amount of sugar, used the Pampered chef cinnamon Plus mixture and use whole wheat pastry flour instead of just whole wheat flour. The pastry flour makes them more tender.
