Pork Carnitas
This makes very flavorful pork carnitas...I've used the same seasonings on beef roast for tacos or enchiladas.
List of Ingredients
3 pounds pork butt roast
4 cloves garlic
2 teaspoons fresh oregano
1 bay leaf
1 cup cooking sherry
1 teaspoon black pepper
1/2 teaspoon salt
1 can coke - don't substitute
Recipe
Put all in a pressure cooker and cook for 1 hour or until it falls apart. Try cutting in half so meat cooks faster OR bake in slow oven 300` or stove top for 3-4 hours. Serve with fresh tortillas and taco type fixings.
Note: I put in slow cooker for 1/2 day and then pressure cooked for one hour. It was fall-apart tender after that. It's a good idea to make this ahead of time and refrigerate before serving because the fat comes to the top and you can skim it off before serving. Shred the meat and then reheat in frying pan before serving.
