A tasty way to use up leftover spaghetti and vegetables.
List of Ingredients
4 large eggs, beaten
3-4 c. cooked spaghetti - 8 oz. uncooked
2 c. cooked veggies - broccoli, carrots, mushrooms etc.
3/4 c. shredded parmesan cheese
1/2 tsp. saltRecipe
Mix all together and spread in non-stick skillet. Press down. Cover and cook 4-5 minutes until eggs are set and cheese is melted. Bottom will brown.
