Pasta ala Caprese
A flavorful pasta dish - if you don't have fresh basil, use 1-2 tsp. dried, crushed in your fingers.
List of Ingredients
2 tablespoons olive oil
1 clove garlic -- sliced
1 12 oz. spaghetti
4 large ripe tomatoes peeled, seeded, drained, -- chopped
1 8 oz. mozzarella cheese -- diced
6 fresh basil leaves -- finely minced
freshly ground black pepper
freshly grated parmesan
Recipe
Saute garlic in oil til it begins to brown. Remove garlic and discard. Cook pasta. Toss tomatoes into olive oil and saute 5 minutes. Remove from heat and transfer to small mixing bowl. Stir in mozarella and basil. Drain pasta and distribute evenly among 4 bowls. Top each with tomato mixture. Season with pepper and cheese. Serve immediately.
