    Mushroom Chicken in Herb Cheese Sauce

    This makes a nice company meal.

    List of Ingredients

    1/4 c. butter
    4 boneless, skinless chicken breasts
    1/2 lb. sliced mushrooms
    1/4 c. dry white wine
    4 oz. semi-soft herb cheese (such as Rondele)
    1/4 tsp. dried dill weed
    salt



    Recipe

    Melt butter in skillet over medium high heat. Add chicken and cook until golden brown and cooked through, about 4 minutes on each side. Transfer to platter and keep warm. Add mushrooms to skillet and cook until softened, stirring frequently, 4-5 minutes.
    Remove with slotted spoon; sprinkle over chicken. Pour wine into skillet and bring to a boil. Add cheese and dill weed; stir until smooth and slightly thickened. Season with salt. Pour over chicken and serve.
