4 cups potatoes -- peeled, chopped
4 cups onion -- chopped
water to cover
chicken bouillon** -- to taste
6 tablespoons butter
6 tablespoons flour
4 cups hot milk
salt -- to taste
grindings of black pepper
cheddar cheese
cooked bacon pieces
green onion -- chopped
Recipe
**I like to use the "Better than Bouillon" that comes in a little jar. It has really good flavor.
Combine potatoes and onions in a large saucepan. Cover with water and add bouillon (about 1 tbsp. or more). Bring to a boil. Allow to cook rapidly uncovered until vegetables are tender. Mash the potatoes and onions leaving a few chunks as you like it. In a 4 qt. saucepan, melt butter. With a whisk, stir in the flour and cook until smooth and bubbly. Add hot milk all at once stirring constantly to keep it smooth. When it's thick, add it to the potato mixture and salt and pepper to taste. Serve at once and pass cheese, bacon and green onion as condiments.
