Featherlight Scones
These turn out very moist and flavorful...
List of Ingredients
3 c. flour
3 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. cold butter
1 egg
1 c. vanilla yogurt
1/2 tsp. vanilla extract
2 tsp. milk
sugar
Recipe
In a bowl, combine flour, baking powder, baking soda and salt; cut in butter until mixture resembles coarse crumbs. Stir in the egg, yogurt and vanilla just until combined. Turn onto a floured surface; knead 6-8 times.
Press into a 9" circle on an ungreased cookie sheet; cut into eight wedges (I use a floured pizza cutter). Brush tops with milk; sprinkle with sugar. Bake at 425 for 12-15 minutes.
