    Scottish Oat Scones

    Recipe Introduction

    This is the scone recipe I make the most - the oatmeal adds nutrition and I like to serve them with honey or lemon curd...Look under Jams and jellies for an easy microwave recipe for lemon curd and Devonshire cream.

    List of Ingredients

    3 1/2 cups flour
    1/4 cup sugar
    4 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    1 cube butter
    1 1/2 cups buttermilk
    2 eggs
    1 cup rolled oats - quick or regular


    Recipe

    Combine buttermilk and oats and let sit for 5 minutes. Preheat oven to 425 F. Combine dry ingredients. Cut in butter to resemble coarse crumbs. Beat buttermilk mixture with eggs and pour into dry ingredients. Mix together with fork until mixture comes together. On lightly floured surface knead 5-6 times. Transfer to prepared cookie sheet (covered with parchment paper). With floured hands pat into 2 8" circles. Cut into 8 wedges. Bake 14-16 minutes til golden. Transfer to wire rack. Serve warm.
