Cookie:
1 cup butter-no substitutes
2 cups sugar
3 eggs
1 - 15 ounce container ricotta cheese
2 teaspoons vanilla
4 cups flour
1 teaspoon salt
1 teaspoon baking soda
Frosting:
1/4 cup butter-no substitutes
3 to 4 cups powdered sugar
1 teaspoon vanilla
3 to 4 Tablespoons milk
1 Tablespoon light corn syrupRecipe
Cookies:
Cream butter and sugar. Add eggs, one at a time beating well after each addition. Beat in ricotta and vanilla. Gradually add flour, salt and soda. Drop by rounded teaspoons on greased sheets. Bake at 350 for 10 to 12 minutes.
Frosting:
Cream butter, sugar, vanilla and corn syrup. Add enough milk until of spreading consistency. Frost cookies and decorate with sprinkles if desired. Store in refrigerator.
