6 cups cubed potatoes
2 teaspoons salt, divided
2 cups small curd cottage cheese
1 cup sour cream
1/4 cup instant minced onions
dash garlic powder
1/2 cup shredded cheddar cheeseRecipe
Cook potatoes only until tender. Cool, cube, then measure. Sprinkle with 1 teaspoon salt. Combine cottage cheese, sour cream and remaining 1 teaspoon salt, onions and garlic powder. Mix thoroughly then gently fold into potatoes. Place in buttered casserole. Top with cheese. Bake at 350 for 45 minutes.
