Blender Microwave Pumpkin Pie
When I get hungry for a pumpkin pie and do not want to make a crust I use this quick and easy recipe. You save a lot of calories without a pie crust. Then you can use more whipping cream!!!!
List of Ingredients
16 oz. can of pumpkin
12 oz. can of evaporated milk
2 eggs
1/2 c. of buttermilk baking mix (bisquick)
3/4 c. sugar or 18 packets of Equal
1/4 tsp ground cloves
1 tsp cinnamon
2 tsp. vanilla
Whipped topping.
Recipe
Spray a 9 inch glass pie pan with Pam.
Place all ingredients in a blender. Blend 1 to 2 minutes.
Pour into pie plate.
Microwave at 50% power 15 to 20 minutes or until center jiggles slightly.
Let stand 15 minutes.
Cut and serve with whipped topping sprinkled with cinnamon.
