    Preachers Cake

    Tea Rooms in our area serve this cake for dessert. Very popular. Easy to make.

    2 c. flour
    2 c. sugar
    2 eggs
    2 tsp. soda
    1/2 c. chopped pecans
    1 20 oz. can of crushed pineapple , including juice

    Mix all, blending well.
    Grease a 9 x 13 cake pan. Add ingredients and spread.
    Bake 25 to 30 minutes at 350 degrees.

    FROSTING

    1 8 oz. pkg of cream cheese
    1 stick of margarine
    1 tsp. vanilla
    1 lb. box of powdered sugar
    1 c. coconut
    1/2 c. chopped pecans
    Mix well and frost cake.


    I do not use the coconut in the frosting.
