    Chocolate Chunk Cookies

    1 pound butter (4 sticks) -- cut in 1" pieces
    1 1/2 cups sugar
    2 cups brown sugar
    1 tablespoon vanilla extract
    3 large eggs
    1 1/2 teaspoons salt
    1 1/2 teaspoons baking soda
    6 cups all-purpose flour
    10 ounces semisweet chocolate chips
    10 ounces milk chocolate chips
    10 ounces white chocolate chips
    1 1/2 cups favorite nuts (walnuts, pecans, or
    macadamia) -- coarsely chopped

    Preheat oven to 325 degrees. Use butter right out of the refrigerator and cut into 1 inch pieces. Put butter into a large mixing bowl and add sugars. Cream on high speed until butter and sugars are fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla and mix well. In a separate bowl, whisk together the flour, salt, and baking soda. Add to the batter, mixing just until the flour is incorporated. DO NOT overmix. Add all the chips and nuts and mix until evenly distributed. This will tax the best of mixers, so if you cannot mix the chips with your mixer, do it by hand. Use an ice cream scoop to measure the cookie dough or use a heaping tablespoonful, about the size of a golf ball. Place on a cookie sheet lined with parchment or a silpat and bake in a 325 degree oven for 10 to 12 minutes for a soft cookie or 15 minutes for a crisp cookie. For the best tasting cookie use the best chocolate you can find.
