Italian Wedding Cookies
If my memory serves me correctly I may have had these at a Polish wedding
too, they are that good! Anyhow, even if you aren't going to marry an
Italian, these cookies are light and delicious, easy to make, and a great
way to make points with the new in-laws.
1 1/2 cups unsalted butter, room temperature
1 cup confectioner's sugar, divided
3/4 teaspoon salt
1 1/2 cups finely ground toasted almonds
1 tablespoons good vanilla extract
3 cups all-purpose flour
In a large bowl, using a hand mixer, cream together the butter, 3/4 cup of
the confectioner's sugar and salt until light and fluffy. Fold in the
almonds and vanilla. Gradually add the flour and mix well. Chill covered for
at least 1 hour. Preheat the oven to 325F. Shape the dough by the tablespoon
into balls and place on an ungreased cookie sheet. Bake for 15 minutes. Do
not brown. Let cool for 30 minutes on a rack then roll in the remaining
confectioner's sugar while still warm.
