    Recipe Introduction


    I changed the recipe a bit as I did not have several of the ingredients that had to be ordered from the KA company.
    This is the best choc. chop cookie I have ever eaten.

    List of Ingredients




    1 c. butter, melted
    1 3/4 c. dark brown sugar, lightly packed
    2 eggs
    2 T. light corn syrup
    1 T. vanilla
    3/4 tsp salt
    2 tsp baking soda
    2 cups all purpose flour
    2 cups dry oatmeal, ground **
    1 c. pecan meal or 1 c. finely ground pecans
    2 c. semisweet chocolate chips
    2 c. white chocolate chips
    1 1/2 c. chopped, toasted pecans

    ** Use a blender or food processor to grind oats to a fine powder.

    Recipe



    In a large mixing bowl, mix by hand the melted butter, sugar, eggs, syrup, vanilla and salt. Stir in the baking soda, flour, ground oatmeal and pecan meal, then the chips and chopped pecans. Mix until all are blended together.

    Drop by large scoop or tablespoon on ungreased or parchment lined cookie sheet. These cookies are sturdy and do not spread much so you won't need to leave much space between them.

    Bake the cookies in a 350 degree oven until they have puffed, about 15 minutes. They will appear almost underdone but will firm up once they are removed from the oven.. Allow them to rest in the pan for 5 minutes, then transfer them to a rack or a paper towel on the counter to cool completely. Makes 48 cookies.

    I never used the insulated cookie sheets as cookies do not brown as well on them. I prefer to use parchment paper or the silpat sheets.
