Vanilla Sugar Cookies
My recipe tag buddy gave me this recipe.
A favorite cookie is a hard choice. I guess maybe this is it because it was
the first cookie I really made for my kids and because it is so versatile. I
got it from a magazine about 25 yrs ago and can't wait to start making it
with my grandson.
Vanilla Sugar Cookie.
1 cup (2 stix) butter softened,
1 1/2 c. sugar
2 eggs,
2 tsp. vanilla exract, 3 c. sifted flour,
2 1/2 tsp. baking powder, 1/2 tsp salt (I
never add salt)
1. Beat butter, sugar, vanilla and eggs till
fluffy.
2. Measure flour, baking powder, salt to
sifter. Sift into creamed mixture, stir till
well-blended.
3. Drop by level tbs. to greased cookie
sheet- or shape into 1 inch balls and then
press into 1/2 inch thickness with bottom of
a drinking glass- buttered and dipped with
sugar.
4. Bake hot oven 400, 10 minutes or until litely browned- remove to wire
racks to cool
The shape is not really important and some can come out big and some small!
These can be sophisicated by any of the following 5 additions
1. Butterschoth WAlnut - sub. 3/4 c. frimly packed brown sugar for 3/4
granulated sugar. Add 1 c. finely copped walnuts.
2..Sugar & spice- reduce vanilla to 1 tsp.Add 1/2 tsp. ground cinammon & 1/4
tsp. ground nutmeg to dry ingredients.
3.Raisin cookies- add 1 c. raisins
4. orange cookies- shaped dough into 1 inch balls, roll mix in 1 c. sugar
and 4 tbs. grated orange rind
5. coconut- add 12 c. flaked cocount. Shape into 1 inch balls.
6. almonds- reduce vanilla to 1 tsp. add 1 tsp almond extract
