Tomato Soup Mix From Fresh Tomatoes
I made a batch of this and it is wondeful. I froze it in two batches and will use the fat free half and half instead of the regular.
TOMATO SOUP MIX
(Prepare this and freeze for making soup later.)
4 cups peeled and chopped ripe tomatoes
1/4 cup chopped onion
6 Tbsp. butter
1. Simmer tomatoes and onion in butter over low heat. Put in
blender and mix well. Put in containers, cool and freeze.
2. To make soup: thaw and heat, add the following ingredients:
1/4 cup flour
1-1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. baking soda
2 cups half and half cream
2 cups milk
3. Blend flour, salt and pepper and add to thawed tomato mixture.
Add baking soda, half and half and milk. Mix well and heat through.
Serve with crackers or croutons. Enjoy!
"Once you have eaten this, you will not be able
to eat canned tomato soup again."
I add about 5 large leaves of fresh basil when processing.
