    3 Cups Sugar
    1 Cup Oil
    4 eggs
    2/3 Cup water
    2 Cups pumpkin
    3 1/2 cups flour
    2 tsp. baking soda
    1 1/2 tsp. salt
    1 tsp. cinnamon
    1 1/2 tsp. nutmeg
    1 cup chopped nuts
    1 (1.3 oz.) envelope whipped topping mix
    1 cup drained crushed pineapple

    Preheat oven to 350 degrees. Grease and flour 2 (9x5 inch) loaf pans.
    Beat together sugar, oil,eggs, water and pumpkin. Sift together flour, baking soda, salt, cinnamon,
    and nutmeg. Beat into wet ingredients. Stir in nuts.
    Pour batter into prepared pans. Bake for hour, or until done. Cool. Remove bread from pans. Place
    on a wire rack. Prepare whipped topping mix according to package directions. Stir in pineapple. To
    serve, slice bread and serve with a dollop of whipped topping.
