    Choc Eclair Dessert

    Here's a delicious Eclair Cake recipe, just keep it in the cooler. Make
    sure you make it the night before, it is soooo easy to make and the
    results are superb. The layers will resemble a thin sponge
    cake...yummy. And, best of all, it will dissapear rather quickly. No one
    will believe it is made with graham crackers.

    Chocolate Eclair Cake
    This is our favorite summer gathering dessert...it goes quick!!

    1 lb. box graham crackers
    2 (4 oz.) pkgs. French Vanilla Pudding
    3 cups milk
    1 (8 oz.) container Cool Whip
    1 container of Milk Chocolate Frosting

    Mix the pudding with milk until thick using an electric mixer. Fold in
    Cool Whip. Layer graham crackers in bottom of 13x9x2-inch baking
    pan. Put 1/3 of pudding mixture over crackers in pan and layer more
    crackers on top, repeat till there is no more crackers. Frost the top by
    putting the chocolate frosting in all 4 corners of the pan and working
    your way in. Refrigerate overnight.
