Chicken and Salsa Pizza

New Wave Pizza Crust
This is a great crust. You can use it for any pizza.
It makes two 15 inch crusts.
1 c, plus 2 T. water
2 T. plus 1 tsp olive oil
1 T. sugar
2 tsp salt
3 1/4 c. bread flour
2 1/2 tsp. active dry yeast
Combine all ingredients in a bread machine according to the manufacturer's instructions for the dough setting. When machine has completed the dough cycle, remove dough from the pan and divide in half.
Place dough on a lightly oiled surface and knead several times. Roll out in a 15 inch circle and place in pizza pan that has been sprayed with Pam and sprinkled with cornmeal.
Topping:
3 bonelss, skinless chicken breasts (cooked and chopped)
1 c. prepared salsa
3 c. pepper-jack cheese, grated
Spread salsa on dough, add chicken, then cheese.
Bake in preheated 425 degree oven until crispy: about 15 minutes.
You can season chicken with a southwest seasoning when cooking. I grill mine on the George Foreman.
