    Penne Rigate & Grilled Chicken Salad

    This recipe was on the back of the R&F pasta box.
    We found it to be our favorite pasta salad.

    List of Ingredients




    8 ounces of penne pasta
    1 pound skinless boneless chicken breast halves
    Salt and Pepper
    1/4 c. fresh lemon juice
    3 medium plum tomatoes
    4 ounces crumbled feta cheese
    1/2 c. sliced ripe olives
    1 tsp Italian seasonings
    Grated parmesan cheese

    Recipe



    Cook pasta, drain. Season chicken with salt and pepper.
    Grill or broil until lightly browned and chicken is no longer pink, basting with lemon juice. Slice chicken into 2 inch strips.

    In a large bowl, combine pasta, chicken, tomatoes, Feta cheese, olives and Italian seasoning; mix well.
    Stir in dressing. Cover and chill thoroughly. Just before serving add parmesan cheese. Serves 4 to 6.
