Bisque of Clam and Lobster Soup

Bisque of Clam and Lobster..(or chicken)
1 1/2 cups clam juice
3 tbls. finely chopped onion
1/4 cup celery diced
1 small bay leaf
2 cups chicken stock or canned chicken broth
3 tablespoons butter
4 tablespoons all-purpose flour
1 cup cooked lobster or chicken, chopped
1/2 cups clams, finely chopped
1 cup light cream
salt and white pepper to taste
1/4 cup whipping cream
1 tbls. finely chppped pimento
simmer the clam juice with the onion, celery, and bay leaf for 30 minutes..add the chicken stock and bring to a boil..strain and discard the veggies and bay leaf..melt the butter in med. sized saucepan and blend in the flour..add the stock all at once and stir vigorously with a whisk until evenly blended..add the lobster (or chicken), light cream, and salt and pepper to taste..simmer 20 minutes over low heat stirring occasionally, but do not boil.. whip the cream to soft peaks..add chopped pimento...serve bisque in warm bowls..top each serving with one tablespoon of the whipped cream-pimento mixture...this bisque is very rich..servings should be small..
